So that we know when it is the holy sacred time to brew our sacred and holy tea. Watches (not pocket watches) are considered heresy when you say "oh look at the time its been 1 whole hour since i last has tea, better brew up".

Just like you can eat mince times at any time apart from christmas, otherwise behead him.
