I think it would be cool to have like a description like in Halo Wars or like any other Real Time Strategies in general to display the strengths and weaknesses of the current two factions. Which is something I'm struggling on at the moment. Maybe someone can explain to me how the UNSC is suppose to be generally played since the cost, the supply amount seems to be on par with covenant ships yet the covenant ships like the lore outmatches the UNSC ships. Is the UNSC largely revolved around playing defensively with the superior defensive structures and counter attack. It's a genuine question so I can quickly get a better understanding of this game.

At this point of the internal build, the UNSC rocks hard in late-game. The UNSC will have a great economy which will grant him a costant fleet resupply. Also, it has SMACs which can one-shot pretty much everything and mines and the best defenses, also a powerful Station (the Anchor) which will become the pillar of UNSC's economy and defense.
Its weakness is that, as canon, many ships will have to die before a single Covenant ship can be taken down. It also is slower in slipspace.
The Covenant has to make a good start, or it has already lost. A quick expansion will grant him a solid economy, which is necessary given the cost of the ships and the time required to replace a destroyed fleet. The DDS-class carrier is a strong ship and will be the only capital until mid-late game, where you'll unlock the true strenght of the Covenant: the Adjudicator Class, the Redemption class and the Salvation Class (the CAS). Also, the CCS is one of the best ships in the game.
Its weakness is that you mustn't let the UNSC get in late game, where its economy and its defenses will present a serious challenge for you. You have to be quick, and forget about the defenses: Covenant ships are quite faster in slipspace than UNSC's ones, so you'll have to rely on a mobile defensive fleet.

Can anyone give me tips on how to "make a good start" with the Covenant? I seem to be able ot play the UNSC pretty well, but I seem to be getting my butt kicked when I play the Covenant. The UNSC is somehow able to reach their lategame in a few minutes, and I basically just got all my ships unlocked. I had good planets, decided to assault their second planet and their reaction force got me. So I thought, "Oh no biggie I'll just make more ships and coem back."
Oh ho ho ho nooope. The UNSC decided to counter attack and kicked my butt with space nukes. All my CCS battle cruisers and the like couldn't beat them back properly and I was using ALL the combat ships I was able to build. Even threw an assault carrier in there twice.
Any suggestions? Because when I've seen the Covenant ai play the game, they magically are able to build this giant dust cloud of ships.

I've noticed getting a very large territory early-game always helps, and pushing for the adjacent enemy's capital can take them out very quickly. Getting CRS cruisers asap also noticeably helps as well.
EDIT: If you want to replace those destroyed ships quickly, I almost always let one or two of my planets fill up with shipyards and capital shipyards.
