I've been seeing youtube videos of the Infinity and I'm in game trying to figure out how to build it but I'm not seeing an option, is it even in the game or were those videos I was seeing just concepts the makers of the mod were showing off? Some intel on this would be greatly appreciated.

In the current alpha release, it is not possible to build the Infinity. It's planned for the next update.

The UNSC Infinity and all 5.6 km of it's awesomeness isn't in the current release. But you will get to use the vessel in full force next release as the others have said.
